It’s a week past New Years…. (or thereabouts). What did you make for New Years food? A traditional good luck meal incorporating black eyed peas? Did you cook from your food storage?
I actually used a bag of blackeyed peas that had been sealed in a food saver bag a long time ago. So long in fact that the ‘best by’ date was 2012. AND they turned out fine!
I made a ham… mashed potatoes… cornbread stuffing… Cream cheese corn… FRESH cranberry sauce and of course the aforementioned blackeyed peas from dry (and deviled eggs and a dessert and.. … …)
For hubs to take to the office I made a spinach dip (Got to have greens on New Years!) and some delicious pepperoni rolls.
Why pepperoni rolls? Well, initially I was going to make something else when hubs told me that he wanted something easy to eat and something other than what I’d planned on.
Isn’t that the way it goes?
Well, I’d already done my grocery shopping for the week and us country folk don’t really like to make the ‘run’ to the grocery store because well, there just isn’t one on every corner ya know. So…. I did what I do best. I looked in the pantry. I looked in the fridge. I looked in the freezer. I took mental stock of what was there… thought about what I could make with what I had on hand… and voila.
Pepperoni rolls were born!
I started with a package of Pillsbury crescent rolls from the fridge… a couple rolls string mozzarella and a package of Armour pepperoni from the freezer.
Rolled out the crescent dough, laid on some pepperoni slices, cut the mozz for each one, sprinkled with seasoning, rolled up, seasoned with both Italian seasoning and garlic salt and baked according to the crescent instructions.
