I grilled chicken last night and because I was trying to use up ‘what I had’ in the freezer I ended up cooking too much. Then again, one can never really tell how much ‘the man’ will consume and I over-judged.
Therefore, I ended up with extra white meat chicken and the house still smells like hickory. (The grill is on the porch to avoid the heat of the sun and the wind wasn’t cooperating so each time the door was opened…. some of that tasty hickory scent escaped into the house. That’s OK while you’re cooking, not so good the next day.)
I absolutely HATE to waste anything…. so I put together some creamed chicken soup out of the leftover chicken… and what I had in the fridge (onion and celery) before that could go bad. Pretty tasty!
Of course, you can hardly mess up a chicken soup! You can add milk, cream, or half and half to thicken up a soup and make it more hardy. You can add onions and celery like me, but you could also add chopped bell pepper, carrots and garlic. I like thyme in my chicken soup but there’s no reason you can’t make it your own with your own favorite herbs (like basil, or oregano or bay…) You can add pasta or rice too!
How do you like to use up chicken? Soup like me? Or chicken salad? Or chicken fajitas…. (Oh man… making myself hungry!!)
