Muffins Made with Breakfast Cereal

I’ve had this box of opened breakfast cereal in the pantry for a while. I was the only person eating it. Guess it ‘looked too healthy’ for anyone else to even try it! Truth is… it was a TASTY cereal that had real fruit it in and I didn’t mind eating it…. but as it happens, you get tired of eating the same thing and this box just sat.

So… I decided to see what else I could do with that last little bit of cereal in the box. I stumbled across a recipe that used plain old cereal and I saw Trisha on TV make a dessert with her old cereal (well maybe it wasn’t old) which inspired me.

This is what I started with:

A box of strawberry cereal from Aldis
A package of freeze dried bananas and strawberries
Strawberry extract

I know what you’re thinking. Why would anyone (1) make anything other than breakfast (or a snack) with cereal AND (2) why didn’t someone just eat the freeze-dried fruit? Well it turns out, no one likes the freeze dried fruit! (And to think I was hankering for a home freeze dryer.)

I opened the freeze dried fruit and crushed the pieces smaller and added to the batter at the end. I used strawberry extract instead of vanilla just because I had it (I also have banana….) and they turned out great and that box of cereal is gone!

Instructions
  1. Stir together the flour, baking powder, salt and sugar.
  2. Stir in the milk, extract, egg and oil.
  3. Fold in the breakfast cereal.
  4. Pour into muffin tins
  5. Bake at 400 for 20 minutes.
