What’s Good to Eat at Your House?

This post contains affiliate links.This week incorporated some ‘take out’ for those really busy days. I know, I know… shame on me. But you know what? It happens.

I did do some new recipes this week…

I started out with what was touted as the best Mexican ground beef casserole ever…. and was sadly disappointed. I personally felt like this recipe used too much corn AND I forgot that Rotel had chunks of tomatoes in it (and the hubs doesn’t like chunky tomatoes) so I substituted salsa (that is AFTER I opened the can of Rotel and dumped it in… big gasp…and had to hand pick all the chunks of tomatoes out…) It was way too dry.

HOWEVER…. if I were to make this again I would use a layer of cornbread on the bottom and leave out the tortillas completely. Of course that makes it a totally different recipe doesn’t it?

But dessert that day was great! I made something called a Cherry Bubble. SO EASY. So fast! TWO ingredients! Grands biscuits and cherry pie filling.

Still in the Mexican mood, I dug out some round steak and made the ‘stuff’ for beef fajitas in the oven.

And as the days rolled on….hubs always has a hankering for seafood. I aim to please!

And then…. the BEST DESSERT of the week…. or the month…or the year… Apple Danish made with crescent rolls. YES!!!

Instructions
  1. Open the can of crescents and unroll. Oil the bottom of a casserole dish and layer half the crescent dough in the bottom.
  2. Mix the cream cheese and powdered sugar together til creamy. Spoon and spread the cream cheese over the crescent dough in the dish.
  3. Pour the can of apple pie filling over the cream cheese mixture and spread evenly.
  4. Top with the remaining crescent dough and sprinkle cinnamon sugar on top.
  5. Bake at 375 for 20-25 minutes.

May add a glaze on top.
