Mix together a cup of the starter with 2 1/2 cups flour and 2 cups warm water in a large bowl. Mix until smooth. Cover and let stand in a warm draft free location 8 hours.
Add four cups flour and the rest of the ingredients to the bowl and mix until smooth. Turn out onto floured surface and knead until smooth and elastic about ten minutes. Grease a bowl and place dough ball inside. Cover, let rise in warm spot until double, about 1 1/2 hours.
Punch down dough, divide in two. Shape each into a loaf. Put a couple slashes in each loaf and let rise until double (about 45 more minutes.)
Heat oven to 375, Bake until loaves sound hollow (about 45-50 minutes). Cool and enjoy.
