  1. Scrub and peel your root vegetables. Slice into thin rounds and add to a bowl.
  2. Slice the onions and garlic thin and add to the bowl along with the peppercorns and herbs. Toss to combine.
  3. In another bowl, add the pickling salt to the water. Add the vegetable mixture to clean jars and pour the salted water over the veggies until covered by an inch.
  4. Cover the jar with cloth and store in the fridge. Fermentation will begin in a day or so. They'll be little bubbles in the jar. After a few days the vegetables will be sufficiently brined. You can then add a lid to the jar and store in the refrigerator.
