Garlic Chicken Stir Fry
Get more veggies in their tummies
(fresh is better!)
bell pepper chunks
Preheat a large skillet with 1-2 tablespoons of your favorite oil. Add the bell pepper to the pan and let simmer.
Add in the broccoli (or your other favorite vegetable) and mushrooms and garlic. Add the cut up chicken to the pan and cook until the chicken and the vegetables are tender.
In a small bowl add the chicken broth, sugar, soy, oil, and cornstarch and stir to combine. Add to the pan and cover. Reduce heat to simmer until the sauce thickens.
Best served over rice.
