  1. Slice the onion crossways about a half inch wide.
  2. Break the rings apart.
  3. Put the coconut flour in one bowl, the eggs and cream in another (whipped) and the crushed pork rinds mixed with the parmesan cheese in a third.
  4. Dip the rings in the coconut flour, then into the egg wash and then coat them in the crushed pork rinds.
  5. Place the onion rings on a greased cookie sheet or baking pan and bake at 425 for 15 minutes.
