Roasted butternut squash in summer? Sure. Why not?
I hate trying to peel a butternut squash (or a pumpkin for that matter.) So once I get one all peeled and cut up I make sure to not waste any of it!
I saved some butternut squash last fall in the freezer. Already peeled and cubed and ready to cook!
Roasted Butternut Squash
quick and easy roasted butternut squash (that is if your butternut is already peeled and cubed)
Preheat your oven to 400 degrees.
Pour the cubed butternut squash into a large plastic bag, add the oil, the garlic and salt and pepper. Toss to coat.
Roast until tender and lightly browned.
