Summer Squash Bread with Lemon Glaze

Ingredients
- 1 cup oil
- 2 cups sugar
- 1/4 cup lemon juice
- 1 teaspoon lemon zest optional
- 1 teaspoon vanilla
- 3 eggs
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 squash grated
Glaze
- 1 tablespoon butter melted
- 1/2 cup powdered sugar
- 1 tablespoon lemon juice

Instructions
- Preheat oven to 325.
- Grease 2 regular loaf pans.
- Mix the oil, sugar, lemon juice, zest and vanilla together. Add the eggs and beat. When the eggs are incorporate you can add the dry ingredients, the flour, salt, baking powder and baking soda. Mix well.
- Grate two medium sized squashes and add to the bowl. Stir to just blend together.
- Pour into your baking pans and bake at 325 for 45 minutes.
- When cool, you may add a glaze. You can make the glaze by mixing the melted butter, powdered sugar and lemon juice and spread over the top.
